Cabbage Soup
Ingredients
- 1 tablespoon olive oil
- ¼ cup red onion, peeled and halved
- 2 spring onions
- 2 cloves of garlic, peeled and chopped
- 2 cups clean spring/borehole water
- ½ cup cabbage chopped
- ½ cup carrots, peeled and thinly sliced
- 1/3 cup zucchini (baby marrows) chopped
- ½ stalk celery with leaves, diced
- 2 large tomatoes peeled
- ½ tablespoon parsley, chopped
- ½ small jalapeno pepper or 1 small green pepper. Chopped
Instructions
- Heat oil in a small saucepan over medium heat and sauté onion and scallions. Let it sweat and mix in the garlic
- Add water and bring to a simmer then add the cabbage and carrots and allow to simmer for 4 minutes
- Add zucchini, celery and tomatoes, simmer for 4 minutes
- Add the rest of the ingredients and heat through
- Remove jalapeno or green pepper if the soup is too spicy before blending
- Remove from the heat and Purée the soup with a food processor or blender
- Return soup to the pot and heat through
