Asparagus Soup
Ingredients
- 700g chopped fresh asparagus
- 600ml Hydration Broth for stock base
- 1 medium onion, chopped
- 1 tablespoon coconut oil
- ½ cup coconut cream (make sure it has no preservatives or additives)
- Pinch of nutmeg
- Salt and pepper to taste
- 1 tablespoon finely chopped parsley
Instructions
- In a large saucepan, sauté onions in coconut oil until golden.
- Add asparagus and stir frequently for about 5 minutes
- Add Hydration Broth and coconut cream
- Add seasoning and bring to the boil
- Lower heat cover pot and simmer until asparagus is soft – about 10 minutes
- Puree in a blender until smooth
- Reheat in the saucepan if necessary
- Serve with chopped parsley
