Asparagus Soup


  • 700g chopped fresh asparagus
  • 600ml Hydration Broth for stock base
  • 1 medium onion, chopped
  • 1 tablespoon coconut oil
  • ½ cup coconut cream (make sure it has no preservatives or additives)
  • Pinch of nutmeg
  • Salt and pepper to taste
  • 1 tablespoon finely chopped parsley


  • In a large saucepan, sauté onions in coconut oil until golden.
  • Add asparagus and stir frequently for about 5 minutes
  • Add Hydration Broth and coconut cream
  • Add seasoning and bring to the boil
  • Lower heat cover pot and simmer until asparagus is soft – about 10 minutes
  • Puree in a blender until smooth
  • Reheat in the saucepan if necessary
  • Serve with chopped parsley
