Butternet Apple Soup

Ingredients

  • 1 tablespoon olive oil
  • ½ onion, peeled and chopped
  • 2 cups clean spring/borehole water
  • ½ cup butternut, peeled and chopped
  • ½ cup carrots, peeled and chopped
  • ½ tart green apple, peeled, cored and chopped
  • ½ stalk celery with leaves, diced
  • ½ teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ¼ teaspoon turmeric

Instructions

  • Heat oil in a small saucepan over medium heat and sauté onion until slightly translucent
  • Slowly add water and bring to a simmer
  • Add butternut and carrots and simmer for 3 minutes
  • Add remaining ingredients and simmer for 2 to 3 minutes until carrots are tender
  • Remove from the heat and Purée the soup with a food processor or blender
  • Return soup to the pot and heat through
