Butternet Apple Soup
Ingredients
- 1 tablespoon olive oil
- ½ onion, peeled and chopped
- 2 cups clean spring/borehole water
- ½ cup butternut, peeled and chopped
- ½ cup carrots, peeled and chopped
- ½ tart green apple, peeled, cored and chopped
- ½ stalk celery with leaves, diced
- ½ teaspoon cinnamon
- ½ teaspoon nutmeg
- ¼ teaspoon turmeric
Instructions
- Heat oil in a small saucepan over medium heat and sauté onion until slightly translucent
- Slowly add water and bring to a simmer
- Add butternut and carrots and simmer for 3 minutes
- Add remaining ingredients and simmer for 2 to 3 minutes until carrots are tender
- Remove from the heat and Purée the soup with a food processor or blender
- Return soup to the pot and heat through
