Spinach Garlic Fennel Soup
Ingredients
- 1 tablespoon olive oil
- ¼ cup onion, peeled and chopped
- 4 garlic cloves peeled
- 2 cups of clean spring/borehole water
- ½ cup fennel bulb, coarsely chopped
- ¼ cup carrot, peeled and thinly sliced
- ½ cup spinach, stems removed and coarsely chopped
Instructions
- Heat oil in a small saucepan over medium heat and sauté onion and garlic, until onions are slightly translucent
- Pour in water and add the fennel and carrots. Simmer for 5 to 10 minutes until veggies are soft
- Stir in spinach and heat through
- Remove from the heat and Purée the soup with a food processor or blender
- Return soup to the pot and heat through
