Orange, Carrot Mint Soup, Spinach
Ingredients
- 1 Tbsp. olive oil
- ½ large onion, thinly sliced
- 1 clove garlic, minced
- 400g carrots, peeled and thinly sliced
- 2 cups clean spring/borehole water
- ½ cup baby spinach, stems removed and coarsely chopped
- 1 tablespoon fresh mint, finely chopped
- ¼ cup freshly squeezed orange juice
Instructions
- Heat oil in a small saucepan over medium heat.
- Sauté onions until slightly translucent, then add garlic
- Add carrots and water. Allow to simmer for 5 to 10 minutes until carrots are soft
- Add spinach and mint and simmer for a minute
- Stir in orange juice and remove from heat
- Purée the soup with a food processor or blender
- Return soup to the pot and heat through
