Butternut Apple Soup 2
Ingredients
- 1 tablespoon olive oil
 - 1 garlic clove peeled and chopped
 - 1/3 tablespoon ginger, peeled and grated
 - 1 cup pumpkin, peeled – seeds removed, chopped
 - 1/3 cup leeks, chopped
 - 1 ½ cups tomatoes, skinned and chopped
 - 1 cup Swiss chard, stems removed and coarsely chopped
 - 2 cups clean spring/borehole water
 
Instructions
- Heat oil in a small saucepan over medium heat and sauté garlic and ginger very quickly
 - Add water and bring to a simmer then add the pumpkin and leek, allow to simmer for 3 minutes
 - Add tomatoes and simmer for 2 minutes
 - Add Swiss chard and heat through
 - Remove from the heat and Purée the soup with a food processor or blender
 - Return soup to the pot and heat through
