Warm Lentil Soup with Apples
Ingredients
- 1 cup lentils
 - 3 cups apple juice
 - 2 cups water
 - 1 onion chopped
 - 1 carrot chopped
 - 1 apple chopped
 - 1 tbsp fresh ginger
 - 1 small red pepper chopped
 - 1 bay leaf
 - 1 small bunch sage
 - 1 tbsp cumin
 - 1 tbsp turmeric
 - 1 tsp cinnamon
 
Instructions
- Put all ingredients in a large pot except potato, salt and pepper.
 - Bring to a boil and let simmer for about 45 minutes then add potatoes.
 - Cook for another 15 minutes or so and add salt and pepper.
 - Serve with brown rice or quinoa.
 - This soup is wonderful on a cold winter day.
 - From this soup you will get plenty of minerals, vitamins and protein. Add some kale to add good levels of vitamins and proteins.
