Cabbage, Apple and Pomegranate Salad
A crisp and bright raw cabbage slaw with juicy pearls of pomegranate fruit and a creamy almond butter-based ginger dressing that will make your taste buds sing! Ingredients – Dressing
- 1 teaspoon apple cider vinegar
- 1-2 teaspoons fresh ginger, minced
- 1 tablespoons raw honey
- 2 tablespoons hemp seeds
- 2 tablespoons unsalted almond butter
- ¼ cup freshly squeezed orange juice
- Fresh cracked black pepper to taste
- Pink Himalayan salt to taste

Instructions – Dressing
- Blend or whisk all the dressing ingredients together until smooth.
Ingredients – Salad
- ¼ red onion, very thinly sliced
- ½ a lemon, juiced
- ½ medium-sized head of green cabbage, shredded
- 1 granny smith apple, thinly sliced
- ½ cup fresh pomegranate seeds
- Optional – smallhandful of fresh kale
Instructions – Salad
- Combine cabbage, onion and apple (if using kale – add now) in a large bowl. Tossing the apple in lemon prevents browning and adds a touch of tang to the salad. Add the dressing to the salad and toss well. Remove to a serving dish, top with a few grinds of black pepper and scatter over the pomegranate seeds. Enjoy!
