Cabbage Power

Cabbage, Apple and Pomegranate Salad

A crisp and bright raw cabbage slaw with juicy pearls of pomegranate fruit and a creamy almond butter-based ginger dressing that will make your taste buds sing! Ingredients – Dressing

  • 1 teaspoon apple cider vinegar
  • 1-2 teaspoons fresh ginger, minced
  • 1 tablespoons raw honey
  • 2 tablespoons hemp seeds
  • 2 tablespoons unsalted almond butter
  • ¼ cup freshly squeezed orange juice
  • Fresh cracked black pepper to taste
  • Pink Himalayan salt to taste

Special Equipment

  • Blender or whisk

Instructions – Dressing

  • Blend or whisk all the dressing ingredients together until smooth.

Ingredients – Salad

  • ¼ red onion, very thinly sliced
  • ½ a lemon, juiced
  • ½ medium-sized head of green cabbage, shredded
  • 1 granny smith apple, thinly sliced
  • ½ cup fresh pomegranate seeds
  • Optional – smallhandful of fresh kale 

Instructions – Salad

  • Combine cabbage, onion and apple (if using kale – add now) in a large bowl. Tossing the apple in lemon prevents browning and adds a touch of tang to the salad.  Add the dressing to the salad and toss well. Remove to a serving dish, top with a few grinds of black pepper and scatter over the pomegranate seeds. Enjoy!

Pomegranate

Pomegranates have been called upon for their health benefits for thousands of years.  It has been referenced Biblically since the days of Moses and was known as a favorite food by the ancient Greeks.

Pomegranate fruit is often suggested by nutritionists in the diet for weight reduction and cholesterol controlling programs. Regular inclusion of pomegranate fruit in the diets boosts immunity, improves circulation, and offers protection from cancers.

Certain ellagitannin compounds such as Granatin B, and Punicalagin are found abundantly in the pomegranate juice. Studies suggest that punicalagin and tannins are effective in reducing heart-disease risk factors by scavenging harmful free radicals from the human body.

The fruit is an also good source of antioxidant vitamin-C, and a good source of many vital B-complex groups of vitamins such as pantothenic acid (vitamin B-5), folates, pyridoxine and vitamin K, and minerals like calcium, copper, potassium, and manganese.
